Reshteh Ash is the defining ingredient of Ash Reshteh, a fragrant herb, bean, and noodle pottage steeped in Persian history and served during celebrations and chilly days. These noodles release balanced starches to naturally thicken the broth without becoming soggy or mushy. Simply add the noodles directly to the boiling herb and legume pot during the last 15 to 20 minutes of cooking. Serve topped with fermented whey (Kashk), sizzling mint oil, and fried onions.
